Method
 

Step-by-Step Instructions
  1. Slice each chicken breast horizontally to create thinner pieces, season with salt and pepper.
  2. In separate bowls, set up breading stations with flour mixture, whisked eggs, and panko with Parmesan.
  3. Dredge chicken in flour, dip in egg, then coat with panko mixture; repeat for all pieces.
  4. Heat oil in a skillet, fry the breaded chicken until golden brown on both sides.
  5. Whisk together Greek yogurt, lemon juice, mustard, honey, minced garlic, and season with salt and pepper.
  6. Preheat broiler and slice croissants in half; brush with melted butter and sprinkle with Parmesan.
  7. Toss Romaine lettuce with remaining Parmesan cheese and lemon dressing until coated.
  8. Assemble sandwiches with chicken, optional hot honey, avocado slices, and dressed lettuce.
