- In a medium saucepan, whisk together almond milk, mashed bananas, protein powder, cornstarch, erythritol, vanilla extract, and salt until smooth.
- Place the saucepan over medium heat, stirring constantly until the mixture thickens and bubbles, about 5–7 minutes.
- Reduce heat to low, continue to stir for an additional 2–3 minutes until velvety.
- Remove from heat, pour the mixture into serving dishes, and let it settle.
- Allow to cool at room temperature for about 10 minutes, then refrigerate for at least 1 hour.
