Preparation
- Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
- In a mixing bowl, combine the cream cheese, sugar, and vanilla extract until smooth and creamy.
- In another bowl, mix the chopped rhubarb, sugar, and cornstarch together.
- Roll out the puff pastry sheet to about ¼ inch thick and cut into squares or rectangles.
- Spread the cream cheese mixture in the center of each pastry piece, followed by the rhubarb filling.
- Fold or crimp the edges of the pastry to enclose the fillings securely and place them on the baking sheet.
- Bake for 20–25 minutes until golden brown and puffed.
- Allow to cool slightly before serving.
