  • 1 sheet puff pastry thawed and ready
Cream Cheese Filling
  • 8 oz cream cheese softened
  • cup granulated sugar for sweetness
  • 1 tsp vanilla extract for flavor
Rhubarb Filling
  • 1 ½ cups rhubarb, chopped the tart ingredient
  • cup granulated sugar to enhance the flavor
  • 1 tbsp cornstarch to thicken the mixture

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine the cream cheese, sugar, and vanilla extract until smooth and creamy.
  3. In another bowl, mix the chopped rhubarb, sugar, and cornstarch together.
  4. Roll out the puff pastry sheet to about ¼ inch thick and cut into squares or rectangles.
  5. Spread the cream cheese mixture in the center of each pastry piece, followed by the rhubarb filling.
  6. Fold or crimp the edges of the pastry to enclose the fillings securely and place them on the baking sheet.
  7. Bake for 20–25 minutes until golden brown and puffed.
  8. Allow to cool slightly before serving.
