Marinating
- In a mixing bowl, combine all marinade ingredients and whisk until smooth. Add chicken thighs and coat well. Cover and marinate for at least 1 hour, preferably overnight.
Cooking
- Preheat your skillet or grill pan over medium-high heat for about 5 minutes.
- Remove chicken from marinade, let excess drip, and place in heated skillet. Cook for about 6-7 minutes on each side until internal temperature reaches 165°F.
- Transfer cooked chicken to a cutting board, let rest for a few minutes before slicing thinly against the grain.
Assembly
- Lay pita bread flat and fill with sliced chicken, cucumber, tomatoes, and onion. Optionally drizzle with garlic yogurt sauce before folding.
- Serve immediately and enjoy!
