Ingredients

For the Ham
  • 8-10 lbs Bone-in ham This cut is ideal for holding moisture and flavor.
For the Glaze
  • 1/2 cup Honey The star ingredient that adds natural sweetness.
  • 1/2 cup Brown sugar Enhances caramelization and gives depth.
  • 2 tablespoons Dijon mustard Adds a tangy kick.
  • 1/4 teaspoon Ground cloves Brings warm notes to the flavor profile.
  • 1/4 cup Pineapple juice Adds a fruity tang and helps tenderize.

Equipment

  • Roasting pan
  • Roasting rack
  • mixing bowl
  • sharp knife

Method

Step-by-Step Instructions
  1. Begin by removing any packaging from your bone-in ham, and pat it dry with paper towels to ensure the glaze adheres well. Using a sharp knife, score the surface of the ham in a criss-cross pattern, cutting about 1/4 inch deep.
  2. In a mixing bowl, combine 1/2 cup of honey, 1/2 cup of brown sugar, 2 tablespoons of Dijon mustard, 1/4 teaspoon of ground cloves, and 1/4 cup of pineapple juice. Whisk ingredients together until smooth.
  3. Generously brush the prepared glaze over the entire surface of the ham, ensuring that it seeps into the scored cuts.
  4. Place the glazed ham on a roasting rack set inside a large roasting pan. Bake it in a preheated oven at 275°F (135°C) for about 1.5 to 2 hours. Baste the ham with the reserved glaze every 20 minutes.
  5. In the final 15 minutes of baking, increase the oven temperature to 425°F (220°C) to create a golden crust.
  6. Once the ham is beautifully browned and cooked through, remove it from the oven and let it rest for 10 to 15 minutes.
