Method
 

Preparation Steps
  1. Preheat your oven to 375°F (190°C).
  2. Rinse the whole chicken under cold water, then pat dry.
  3. Rub the chicken with olive oil, minced garlic, thyme, rosemary, salt, and pepper.
  4. In a bowl, mix the zest and juice of the oranges, honey, soy sauce, and Dijon mustard with salt and pepper.
  5. Place the seasoned chicken in a roasting pan and scatter the quartered onion around it. Pour the glaze over the chicken.
  6. Add chicken broth to the bottom of the pan.
  7. Roast the chicken for 1 hour to 1 hour and 15 minutes, basting occasionally.
  8. Let the chicken rest for 10 minutes after removing from the oven.
  9. Optional: Stir in butter into the pan juices for a richer sauce.
