Step-by-Step Instructions
  1. Heat 2 teaspoons of olive oil in a large skillet over medium heat. Add 1 pound of ground chicken, breaking it up with a spatula as it cooks. Stir for about 5-7 minutes, until browned and cooked through.
  2. Stir in 1/2 cup of buffalo sauce, 2 tablespoons of soy sauce, 2 teaspoons of garlic powder, and 1 teaspoon of onion powder. Mix thoroughly and simmer for around 2 minutes.
  3. Add 1 cup of broccoli florets to the skillet, mixing with the chicken. Cook for an additional 3-5 minutes until the broccoli is tender.
  4. Prepare your base by heating 3 cups of cauliflower rice or cooked white/brown rice according to instructions, about 5 minutes until tender.
  5. Place a scoop of cauliflower rice or cooked rice into bowls. Top with the spicy chicken and broccoli mixture.
